Gajar Ka Halwa: A Warm and Comforting Winter Dessert

Craving a warm, comforting winter dessert that's everyone's favorite?

Gajar Ka Halwa, also known as carrot halwa, is a rich and aromatic dessert made with grated carrots, milk, ghee, and sugar. It's a quintessential Indian sweet, often prepared during festivals and celebrations.

Ingredients

  • 2 cups grated carrots
  • 2 cups whole milk
  • 2 tbsp ghee
  • ½ cup sugar (adjust to taste)
  • ¼ tsp cardamom powder
  • 10-12 cashews and almonds, chopped
  • 1 tbsp raisins

Recipe

1. Sauté the carrots

  • Heat ghee in a heavy-bottomed pan and add the grated carrots.
  • Sauté on medium heat until they soften and release a slight aroma (about 5-7 minutes).

2. Cook with milk

  • Pour in the milk and cook the mixture on low to medium heat, stirring occasionally.
  • Let the milk reduce and thicken.

3. Add sugar and flavor

  • Add sugar and cardamom powder, mixing well to combine.
  • Cook for another 5-7 minutes until the halwa reaches a thick, creamy consistency.

4. Garnish and serve

  • In a separate pan, fry the chopped nuts and raisins in a little ghee.
  • Garnish the halwa with the fried nuts and raisins.
  • Serve warm or chilled for a delightful treat.
