  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • 2 tbsp oil
  • Fresh coriander, chopped
  • Salt to taste

Recipe:

  1. Prepare the Dosa Batter:
    • Soak rice, urad dal, chana dal, and fenugreek seeds in water for at least 4 hours or overnight.
    • Drain the mixture and grind it to a smooth batter, adding water as needed. The batter should be thick but pourable.
    • Allow the batter to ferment for 8-12 hours in a warm place until it rises and becomes slightly sour. Stir in salt before using.
  2. Make the Masala Filling:
    • Boil the diced potatoes in water until tender. Drain and mash them lightly.
    • Heat oil in a pan, add mustard seeds and let them splutter. Add cumin seeds, urad dal, chana dal, and sauté until they turn golden brown.
    • Add onions and green chili, and cook until onions become translucent.
    • Stir in turmeric powder, mashed potatoes, and salt. Mix well and cook for a few minutes. Garnish with fresh coriander.
  3. Prepare the Masala Dosa:
    • Heat a non-stick griddle or tawa over medium heat and lightly grease it.
    • Pour a ladleful of dosa batter onto the griddle and spread it in a circular motion to form a thin, even layer.
    • Drizzle a little oil around the edges of the dosa and cook until the bottom is crispy and golden brown.
    • Place a portion of the prepared potato masala in the center of the dosa and fold it in half or roll it.
    • Serve hot with coconut chutney and sambar.
