Ingredients:

  • 1 cup quinoa
  • 1/2 cup mixed vegetables (carrots, peas, beans)
  • 1 onion, chopped

  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 2 tbsp oil

  1. Rinse quinoa under cold water and drain.
  2. Heat oil in a pan, add cumin seeds, and let them splutter. Add onions and sauté until translucent.
  3. Stir in the ginger-garlic paste and cook for 2 minutes.
  4. Add chopped tomatoes, turmeric powder, garam masala, and salt. Cook until tomatoes are soft.
  5. Add mixed vegetables and cook for 5 minutes.
  6. Add quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and water is absorbed.
  7. Garnish with fresh coriander and serve hot.
