Tiranga Paneer & Veggie Skewers showcase the iconic Indian Tricolor using fresh paneer, orange bell peppers, and crisp green capsicum marinated in spiced hung curd with zero artificial colors for a delicious, show-stopping appetizer.
Ingredients:
- 250g paneer, cut into large equal cubes
- 1 large orange bell pepper, cubed
- 1 large green capsicum, cubed
- 1 cup hung curd (thick yogurt)
- 1 tbsp ginger-garlic paste
- 1/2 tsp Kashmiri red chili powder & 1/4 tsp turmeric (for saffron color)
- 2 tbsp mint-coriander puree (for green color)
- 1 tsp chaat masala & salt to taste
- 1 tbsp oil or butter for cooking
Recipe:
- Prepare the base marinade by whisking hung curd, ginger-garlic paste, chaat masala, and salt together; divide into 3 bowls.
- Color the layers naturally by adding red chili powder and turmeric to Bowl 1 (Orange), leaving Bowl 2 plain (White), and stirring mint-coriander puree into Bowl 3 (Green).
- Coat the ingredients with orange bell peppers and paneer in Bowl 1, plain paneer in Bowl 2, and green capsicum in Bowl 3; let marinate for 15 minutes.
- Thread onto wooden skewers in tricolor order: Orange pepper/paneer at top, White paneer in middle, and Green capsicum at bottom.
- Pan-sear on a skillet with oil for 2-3 minutes per side until lightly charred and serve warm with mint chutney.
