Healthy Recipe: Oats Veggie Pancakes

These savory pancakes made with oats and vegetables are high in fiber, low in oil, and perfect for busy mornings.

Ingredients:

  • 1 cup instant oats (ground to a powder)
  • 1/2 cup curd
  • 1/4 cup chopped onions
  • 1/4 cup chopped carrots or capsicum
  • 1 green chili, finely chopped
  • Salt, turmeric, chili powder to taste
  • A pinch of baking soda (optional)
  • Oil for greasing

Recipe:

  1. Mix ground oats, curd, and water into a thick batter.
  2. Add chopped veggies, spices, and baking soda if using.
  3. Let rest for 10 minutes.
  4. Heat a non-stick pan and pour the batter like pancakes.
  5. Cook on both sides till golden brown.
  6. Serve with green chutney or yogurt dip.
