Brunch Idea: Sooji Veggie Appam

Need a low-oil, veggie-loaded brunch idea?

Sooji Veggie Appam (Paniyaram) are crispy outer, soft inner savory balls made from instant rava batter mixed with colorful chopped vegetables cooked in an appam pan.

Ingredients:

  • 1 cup rava (semolina)
  • 1/2 cup curd (yogurt)
  • 1/2 cup mixed vegetables (carrots, capsicum, corn), finely chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp fruit salt (Eno)
  • 1 tbsp oil

Recipe:

  1. Mix rava, yogurt, and water to form a thick batter and let rest for 10 minutes.
  2. Heat 1 tsp oil, temper mustard seeds, and sauté veggies for 2 minutes before adding to batter.
  3. Stir in Eno fruit salt right before cooking to make batter fluffy.
  4. Grease appam pan cavities with oil and pour batter into each slot.
  5. Cover and cook for 3-4 minutes per side until golden brown.
