Sooji Veggie Appam (Paniyaram) are crispy outer, soft inner savory balls made from instant rava batter mixed with colorful chopped vegetables cooked in an appam pan.
Ingredients:
- 1 cup rava (semolina)
- 1/2 cup curd (yogurt)
- 1/2 cup mixed vegetables (carrots, capsicum, corn), finely chopped
- 1/2 tsp mustard seeds
- 1/2 tsp fruit salt (Eno)
- 1 tbsp oil
Recipe:
- Mix rava, yogurt, and water to form a thick batter and let rest for 10 minutes.
- Heat 1 tsp oil, temper mustard seeds, and sauté veggies for 2 minutes before adding to batter.
- Stir in Eno fruit salt right before cooking to make batter fluffy.
- Grease appam pan cavities with oil and pour batter into each slot.
- Cover and cook for 3-4 minutes per side until golden brown.
