Ingredients

  • 1 tbsp sugar
  • Salt, to taste
  • 1 tbsp lemon juice
  • 1 tbsp oil

  • 1 tsp Eno (fruit salt) for fluffiness
  • 1/4 cup water (adjust as needed)


Recipe

1. Soak the dal

  • Wash the moong dal thoroughly and soak it in water for 2-3 hours.
  • After soaking, drain the water.

2. Grind the dal

  • In a blender or food processor, blend the soaked dal with a little water to make a smooth batter (similar to pancake batter consistency).
  • Add salt, turmeric, and a pinch of sugar for flavor.

3. Prepare the steamer

  • While the batter is resting, set up a steamer or large pot with water on medium heat.
  • Grease a steaming tray or shallow dish.

4. Add seasoning

  • In a pan, heat 1 tbsp oil.
  • Add cumin seeds, mustard seeds, and chopped green chilies.
  • Sauté until the seeds splutter, then add grated ginger.
  • Pour this tempering into the prepared batter and mix well.

5. Add Eno and steam

  • Just before steaming, add Eno (fruit salt) to the batter and mix gently.
  • Pour the batter into the greased steaming tray.
  • Steam for 15-20 minutes, or until a toothpick comes out clean.

6. Garnish and serve

  • Once cooked, let the Moong Dhokla cool slightly, then cut it into square pieces.
  • Garnish with freshly chopped coriander leaves and a drizzle of lemon juice.
  • Enjoy with a side of chutney or even plain!
