- 1 cup oats (plain, not flavored)
- 1 small onion, finely chopped
- 1 small carrot, finely chopped
- ¼ cup green peas
- 2 green chilies, finely chopped
- 1 tsp mustard seeds
- 1 sprig curry leaves
- ½ tsp turmeric powder
- 1 tsp sambar powder (optional)
- 1 tbsp oil or ghee
- Salt, to taste
- Lemon juice, for garnish
- Fresh coriander leaves, chopped
Recipe
- Dry roast the oats in a pan for 2-3 minutes and set aside.
- Heat oil or ghee in the same pan and add mustard seeds. Let them splutter.
- Add curry leaves, green chilies, and chopped onions. Sauté until onions turn translucent.
- Toss in the carrots and peas. Cook until the vegetables are tender.
- Add turmeric powder, sambar powder (if using), and salt. Mix well.
- Add 1½ cups of water to the pan and bring it to a boil.
- Stir in the roasted oats and cook on low heat until the mixture thickens and the oats absorb all the water.
- Garnish with lemon juice and fresh coriander leaves.
Serve hot with a dollop of yogurt or chutney.
