Ingredients:

  • Paneer (Indian cottage cheese), cut into cubes
  • Bell peppers, onions, and tomatoes. Cut into chunks
  • Yogurt
  • Ginger-garlic paste
  • Turmeric powder
  • Garam masala
  • Chaat masala
  • Salt
  • Fresh mint leaves
  • Green chili
  • Lemon juice

Method:

  1. Mix yogurt, ginger-garlic paste, turmeric powder, garam masala, chaat masala, and salt to make the marinade in a bowl.
  2. Add paneer cubes and chopped vegetables to the marinade. Coat them evenly and let marinate for at least 30 minutes.
  3. Thread marinated paneer and vegetables onto skewers.
  4. Grill or bake the skewers until the paneer is golden brown and the vegetables are tender.
  5. Meanwhile, prepare the mint chutney by blending fresh mint leaves, green chili, lemon juice, and salt until smooth.

Recipe 2: Vegetable Biryani with Raita

Ingredients:

  • Basmati rice
  • Mixed vegetables (carrots, peas, potatoes, etc.)
  • Onion, thinly sliced
  • Tomato, chopped

Recipe 3: Gujiya (Sweet Dumplings)

Ingredients:

  • All-purpose flour
  • Khoya (milk solids)
  • Sugar
  • Desiccated coconut
  • Chopped nuts (almonds, cashews, pistachios)
  • Cardamom powder
  • Ghee (clarified butter) for frying

Method:

  1. Prepare a dough using all-purpose flour, water, and a little ghee. Let it rest for 30 minutes.
  2. In a pan, roast khoya until it turns light golden. Add sugar, desiccated coconut, chopped nuts, and cardamom powder. Mix well and cook until the mixture thickens.
  3. Roll out the dough into small circles. Place a spoonful of the khoya mixture in the center of each circle.
  4. Fold the circles in half and seal the edges using a fork or your fingers, creating a crescent shape.
  5. Heat ghee in a deep frying pan. Fry the Gujiyas until golden brown and crisp.
  6. Drain excess oil and let it cool before serving.

Recipe 4: Rasgulla (Sweet Cheese Dumplings in Sugar Syrup)

Ingredients:

  • Milk
  • Lemon juice or vinegar
  • Sugar
  • Water
  • Cardamom 

Method:

  1. Heat milk in a large pot until it comes to a boil. Add lemon juice or vinegar and stir until the milk curdles.
  2. Strain the curdled milk through a muslin cloth to separate the whey from the cheese.
  3. Rinse the cheese under cold water to remove any lemony flavor.
  4. Knead the cheese until smooth and divide it into small balls.
  5. In a separate pot, mix sugar, water, and crushed cardamom to make the sugar syrup. Bring it to a boil.
  6. Gently drop the cheese balls into the boiling syrup. Cover and cook for about 20 minutes.
  7. Let the Rasgullas cool in the syrup before serving. Enjoy these soft and spongy sweet treats!
